Three Ingredient Oat Bars

I am the oldest child of three, with two younger brothers. Before my youngest brother was born, I had hoped for a sister and was pretty devastated when I was told the baby would be a boy. Little did I know, as an 8 year old, the perks of being the only daughter! I was a daddy’s girl and pretty much had him wrapped around my finger. I also always had my own room, which during the teenage years was definitely nice. I was and still am spoiled.

I say all this to now tell you how much I love having sister-in-laws! When I married my husband, I gained two sisters and now through his brothers getting married, I have three more! We have so much fun together and I love each of them so much. One thing I love about having sister-in-laws is getting to bounce ideas off one another. I was in a bit of a rut when it came to finding healthy snacks to feed my toddler. The following recipe came from one of my SIL’s and my daughter absolutely loves them. Well, so do I!

Just the name Three Ingredient Oat Bars sounds appealing, right?! I love anything with minimal ingredients! Sometimes I will come across a recipe that looks so yummy, but when I see there are 5,000 ingredients I just can’t even handle it!

Three Ingredient Oat Bars
1 cup Peanut Butter (I use a natural, organic peanut butter)
1/2 cup Honey
3 cups Oats

(I used up the last of all my ingredients. Guess I better get to the store!)

Mix the peanut butter and honey together. Microwave it for 1-2 minutes, until it can be mixed together smoothly. Pour it over the oats and mix thoroughly.
Cover an 8×8 or 9×9 pan with foil. Spray it with non-stick spray and then press the oat mixture into the pan. Once you have it even, pop it into the refrigerator for a few hours to harden. I like to sprinkle some chocolate chips on it about a half hour after I’ve put it in the refrigerator. The mixture will be pretty warm at first, so the chocolate chips will melt if you put them on right away. Lesson learned!
